how to make the only good nuts and bolts

Walking with my husband the other day in the pre-rain quiet, he told me that if somebody ever wanted to trap me, they could bait the trap with nuts and bolts. He's probably not wrong about that.


The first thing I ever remember stealing was a cookie from the strawberry jar in my step-mother's kitchen. It was a feat because, as my sister taught me, she used that giant ceramic cookie jar so she'd hear us when we stole a cookie. The precious can of nuts and bolts that Grandma had given us was right beside the strawberry jar, and that is the second thing we stole. We took it under my big sister's bed in the middle of the night (because obviously if somebody heard us crunching from under there they'd never find us, right??)... and we crunched up those nuts and bolts. Every piece was wonderful.

Grandma's nuts and bolts are so renowned that even my brother and friends back on the island where I lived with my Mum and Pappa can remember the flavour of them. At least once a year I'd return from visiting my father, step mother, and sisters with a gift from Grandma: always in a green MJB coffee can, with a piece of wax paper under the plastic lid. The green can and the feeling of lifting off the wax paper was like the take-along version of Grandma's love, and the contents were something extra special: A small stash of the dream collection of spiced and toasted cereals, nuts and pretzels that nobody anywhere could make even remotely as good as my Grandma could.

And that was by design. There were rumours about her recipe; my Mum said she was sure it came from a local newspaper back in the 60's. But that's as close as we came to knowing Grandma's secret. A few times over the years, Grandma clapped her hands and told me delightedly about her neighbour's husband who always came to visit her for some nuts and bolts. Her eyes sparkled as she described how her neighbour came begging for the recipe so she could make them for her husband, and Grandma obliged, giving her friend the recipe... but without the key ingredient. The husband kept coming to my Grandma, because yes - Grandma's nuts and bolts are the only good nuts and bolts. There's just something about them that defies explanation, and you just. can't. stop. eating. Even when it means dangerously stealing them from beside the noisy cookie jar to eat under the bed.

It took me thirty years to find the recipe. When I was in my early twenties, Grandma called me with urgency in her voice, asking whether I was going to the US anytime soon. She said she was in dire need of "Old Hickory Smoked Salt", and although she refused to tell me what she needed it for, I had a pretty good idea. I never did go shopping in the US, and never bought her that salt, but I've also never forgotten the clue she gave me that day. I thought maybe Grandma would bequeath her secret recipe to her daughter and all of us granddaughters when she got old, but a series of strokes took her communication away from us before that could happen, if it ever might have at all. The last time she spoke to me about nuts and bolts it was only to tell me again the story of her neighbour's husband and the secret ingredient she never gave away. Grandma died with the nuts and bolts recipe still shrouded.

Let me just tell you a little something about my Grandma, because there's no point sharing her recipe without sharing a bit of her personality. She was the daughter of Ukrainian immigrants, and talked about her mother hiding in the trees as her village was overtaken in war. She liked to eat perogy at the Saskatchewan Pavillion restaurant or the Ukrainian Village. She had ESP and had rather involved conversations with birds. Her house was a virtual shrine to the sixties, and included my father and aunt's nearly-in-tact bedrooms and rec room from that time. Her fingernails were also a relic of the sixties, but her conversation was extravagant. She was a bold teller of stories. She never stopped. She even went and kissed the Blarney Stone, on a trip with my Irish Grandfather - a feat that involves being dangled over the edge of a castle by strapping young men just to kiss the same piece of rock that thousands of babbling lips before have touched. She told that story often. So I can't tell you for sure how many of her stories were rooted more in fact or fiction, but they were sure amazing. She would tell you about anything she felt like, and nothing she didn't. Every time I asked about how to make nuts and bolts, I got some kind of story, but never the recipe.

So this year, two years after Grandma died, my aunt showed me something amazing. It was an old yellowed newspaper clipping in a plastic baggie, with the still-discernible recipe for nuts and bolts -- the original clipping from the December 7th 1961 issue of the Vancouver Sun newspaper. Page 64. Then she invited me to dig through my Grandma's ancient spice jars. I mean they're older than I am. And so stale you can't tell for sure that they contain what the labels say they do. Some definitely don't! All of the labels are Spice Islands, and you can't even buy those around here anymore. Who knows what Grandma filled them with.

So I bought some fresh spices and followed the old recipe to make a batch of nuts and bolts. I had to make some adjustments and guesses, because there are SO many types of "seasoning salt", and SO many types of "smoke flavoured salt". And also my family is gluten-free, so I had to adjust for that as well. From my Grandma's spice-seeking phone call, I knew the salt had to be hickory smoked, but that wasn't anywhere to be found, so I substituted the pepper for hickory smoked pepper that I found at Queensdale Market in North Vancouver, and the smoked salt for sea salt.

Bah. It just wasn't right. It was like all the other nuts and bolts in the world: disappointing. So I looked at the spice jars again.

Oh Aunt Liz I can't tell you how informative those stale old spices were. And the one that says it's old hickory smoked salt but clearly contains some kind of flavour-deprived, petrified garlic or onion? Ew. But SO informative!! Because those old jars have no ingredient listings, so I had to go researching. And that's when I found something curious: The ingredients in Spice Islands Old Hickory Smoked Salt are salt, cocoa, smoke flavouring, propylene glycol, and silicon dioxide. WHAT?! COCOA?! I knew right away we didn't need those last two ingredients, but something in my gut told me to throw a bunch of cocoa on my inferior batch of nuts and bolts. So I did. And it worked!! Grandma's secret ingredient was cocoa. And did she even know? I'm not sure. It was part and parcel of the smoked salt she always used, but I'm telling you right now: As soon as I added a couple of heaping spoonfuls of cocoa to my already-baked nuts and bolts, they were right. The kind of right only the initiated would recognize. So I brought my brother over and gave him some to sample. He approved. It's not just my imagination.

Here's my slightly-more specific version of Grandma's nuts and bolts recipe. You might adjust to your preference, but don't omit the cocoa.

Hermila, Amo, Mischa, Bree - this is for you. Make the nuts and bolts. You deserve them. We all deserve to make a hundred cans full and eat them whenever we like until our hearts are full of all the goodness. Which apparently equals cocoa. Enjoy. And thank you, Aunt Liz.

Grandma Gallaher's Nuts and Bolts
  • box of gluten-free Rice Chex
  • box of gluten-free cereal O’s
  • bag of gluten-free stick pretzels
  • bunch of peanuts
  • bunch of pecans (more than peanuts!)
  • 1 cup butter, melted
  • 1tsp smoked paprika
  • 1tsp dried and crushed summer savory
  • 2tbsp dried marjoram
  • 1 tbsp hickory smoked pepper
  • ½ tsp powdered garlic
  • ½ tsp powdered onion
  • 1big tbsp sea salt
  • 2 tbsp cocoa powder
Toss all together and bake at 250F until perfectly crunchy and slightly brown. 
You can add Shreddies if you're not having to be gluten-free. :-)
Maybe use a spatula to turn them over a couple of times.
Cool and package in jars or cans.
Hide them.

Wild Food Spotlight 5: Rose Hips

Here we are enjoying a rare white December. Some community events have had to be cancelled due to the slippery roads, while others have carried on despite the hazards, and we've trouped out in our boots and snow gear to join our friends and loved ones in celebrating. What a joy to see the sun hit the solid crystalline snow like a crash of diamonds; to see drooping snowmen ornamenting so many driveways. I saw a large white Mike Wazowski in the meadow! Before the big melt began this week, the sides of streams and edges of bluffs were adorned with the most intricate icicles; children's faces were pink from eating them, and from all the frolicking that happens when we're given the gift of snow.

So who really thinks about foraging while skating on the lake? Well... you might. Or especially while trudging through the rained-on snow we've got right now. After all... the snow is beginning to crush like snow-cone ice and you'd need a tasty syrup to flavour that. Mmmm... syrup. What about winter berries? Most of them aren't particularly edible – some are even poisonous. But rose hips - those are a gift from the winter to your health. And your snow-cone, should you desire one.

If you cut into a rose hip, you'll find they're mostly seeds, which frankly are hardly useful and very scratchy. It's the thin layer of meat just under the skin that we're after, whether for jam, jellies, or syrup. Rose hips are best harvested after the first frost, which further develops their sugars and renders that outer layer of meat soft and pulpy. In the interior I used to squeeze this pulpy jam out and eat it straight off the bush. However, in our area they won't develop enough sugar to balance out the sour taste of their extremely high ascorbic acid (vitamin C) content.

Rose hips actually have such a high vitamin C content that they have been used by many cultures as a winter immune booster, and to prevent scurvy. Of course, heating does greatly diminish the vitamin C content, but thankfully rose hips seem to retain more than many other fruits. In war-time Britain, vitamin C was in short supply due to lack of imports, and people ate a lot of rose hip preserves. In a study conducted in 1942, the British Medical Journal found rose hip syrup to contain equal to more than twice as much vitamin C as other foods such as blackcurrant jam, fresh and tinned orange juice, and tomato juice (1). One final note about vitamin C: It's important to cook rose hip preserves in non-aluminum pans, as aluminum also destroys vitamin C.

Now back to those snow-cones. I'm writing this as the syrup is cooling in the kitchen, and my kids are eager for taste-testing. But you can't pour hot syrup over snow, so they'll just have to keep waiting!




Harvesting rose hips is simple: Nothing more than twisting off the hips until you have a bowlful. Choose rose hips that are plentiful and bright red. They'll darken after freezing, and the skin of some will split open, revealing a bright red or orange paste underneath. You don't want the hips that are becoming black or brown, and those that are still pale and hard are better for making tea.

Tea: Just chop up a tiny handful of rose hips and steep in hot water until it's as strong as you like it!

Syrup: cut the rose hips in half, and dump them into a non-aluminum saucepan. Add enough water to fully cover them all, plus an extra centimetre or so; an inch higher if you've filled a medium-sized pan.

Bring to a boil, and after a couple of minutes of boiling, mash with a fork or potato masher until the concoction begins to resemble tomato soup.






When you don't see many chunks of pulp floating around anymore, and it's quite thick and creamy, strain it through a sieve or jelly bag into a ceramic bowl.

Pour the strained juice back into the saucepan (make sure no seeds remain on the sides of the pan), and bring to a boil again. Add sugar or honey to taste. Turn the heat down just enough so that it keeps boiling, and cook until it's thick enough to stick to the back of a spoon (or as thick as you like!)

Snow Cones: Let it cool, and pour it over a clean cup of this nice slushy ice we have. You can store whatever you don't consume right away in the fridge (or outside in a sealed container!) for a couple of weeks. I dare you try and make it last that long – it's also excellent on pancakes, drizzled over trifle, cakes, or even mixed with sparkling water for a special drink.

Annie's Grain-Free Kruidnoten: Jawel!

(AKA granenvrije, graanvrij, glutenvrij, strooigoed en pepernoten)

As you're probably aware, our daughter's diagnosis of Hashimoto's Disease has meant big changes in our family's diet. The biggest of those changes (and most disappointing to an 11 and now 12-year-old girl), is the removal of most grains and sugars from her diet. All sugars are out - even honey and maple syrup. We are making an infrequent exception for special occasions, however, and Sinterklaas is one of those. How can we expect our girl to go through Sinterklaas and not consume a single kruidnoot? So she and I created this recipe whereby she gets all the taste and crunch of kruidnoten, without the grains and sugar!

A note on sugar: We are using xylitol as the sweetener for these special treats, but the same rule does not apply to everyone. In fact xylitol can cause diarrhea and other problems if eaten too often or in large quantities. So if you have your own preferred sweetener, try it out! This recipe will also work with coconut sugar, and probably honey, although we haven't tried that yet. Let us know in the comments how you alter this and how it works for you!


Grain-Free Kruidnoten


Mix in a bowl:
  • 1 egg, slightly beaten
  • 1 tsp vanilla extract
  • about 6 to 7 tbsp coconut oil, melted and cooled to approximately skin-temperature. This is important. If you pour hot oil into the bowl it will cook the egg.
  • 1/2 cup xylitol or coconut sugar

Mix in a separate bowl, then add:
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 2 tbsp speculaaskruiden* (see below)
  • 1/4 tsp xanthan gum

Roll into tiny balls, squish just a little flat on a paper-lined baking sheet, and bake at 350F for 12 minutes.

After 12 minutes, take them out and put the whole paper liner on a rack to cool . They look great, but are not yet crunchy, as proper kruidnoten should be!

Once cooled, put them in a dehydrator on a low-temperature setting (we used 150F), and dehydrate for a few hours until they're nice and crunchy. After being left overnight, they'll be even crunchier!





Speculaaskruiden is a mixture of spices for making Dutch spice cookies. This is my own blend, specifically for kruidnoten. It makes more than you'll need for this recipe, but believe me - you will use it up quickly!

Use a scale for this, and measure the following into a bowl. Mix it well and store in an airtight jar.
*all ingredients should be finely ground
  • 50g cinnamon
  • 25g nutmeg
  • 5g cloves
  • 10g ginger
  • 5g black pepper
  • 3g anise seed (optional)

Wild Food Spotlight 4: Burdock

It's pretty soggy out these days. What remains of our wild and cultivated leafy greens is mostly melting away in a grey-brown sludge, battered by fallen branches and covered by the remains of other plants. But underneath the nearly-frosty ground, the roots are at their prime; ready for eating, canning, roasting, drying and steeping.

Similar to other members of the Aster family such as Canada thistle, dandelion, artichoke and chicory, burdock root contains plenty of the dietary fibre, inulin. Among other benefits, inulin supports the growth of beneficial bacteria in the intestines(1). As a diuretic, starchy root vegetable, and source of inulin, burdock is used by many populations both medicinally and as food.(2)

Identifying burdock: The easiest way to identify burdock is to find burs. If you walk near the edge of the trails or roadsides around here, you probably already know where to find them, unless you've already carried them all away on your sleeves and boot-laces. They're those brown prickly velcro-like seed-heads that cling to their old brown stems at about knee-height, this time of year. (Yes, Velcro was indeed invented when Swiss engineer George de Mestral was inspired by similarly clingy burdock burs!(3))



This large plant is conspicuous in summer, with its broad, slightly-fuzzy, heart-shaped leaves, and magenta thistle flowers or green (and later brown) burs all over its tall stems. However at this time of year it's beginning to look rather sorry. The year-old burdock plants (those that haven't yet flowered) will generally look like a handful of yellowing limp leaves, radiating out from the centre. That's where you'll find the root. In older plants that have already flowered, the root will be at the base of those long brown stalks of burs.

Note: Do not confuse burdock with foxglove (medicinal in small amounts but can cause heart-failure), which has a very different scent and diamond-shaped, but similarly large and fuzzy leaves. If you're new to burdock harvesting, take a guidebook and make sure you're harvesting from the correct plant.

Harvesting and cooking: The best roots for eating come from those plants that haven't yet flowered. The older roots are inferior, and better dug in spring. You can dig the roots up any time of year, but mid- to late-autumn is when they're best, after a summer of good growth, and before they freeze. 


Dig down very deep, pulling out the whole root, which can be very long. Give the roots a scrub, and then peel them. I find a potato peeler works quite well. Now you can chop them up or sliver them and cook them as you would parsnips or other such roots: add to soups, sauté, ferment (as in kimchi) or stir-fry with other vegetables. My husband wants me to point out that they can be rather bitter and maybe not best as the main component of a dish.


Fresh burdock roots don't keep very well, and lose some of their health benefits as they're stored in the fridge, so you may prefer to harvest them fresh rather than store them.

Tea or Coffee: One of the most delicious uses of burdock that I know of is as a tea or coffee substitute. You can cut your peeled burdock into very small pieces and dry it, then store it in a jar until needed for steeping. There are three basic ways of steeping burdock root for a hot drink:

Raw infusion: Simply steep the raw dried roots. This is very weak and 'leafy', and frankly not very enjoyable!

Roasted and steeped as tea: either over a stove or in an oven, slowly heat the dry burdock root pieces until they are brown (but not black!). Then steep as you would regular tea. The result is a rich and earthy-flavoured transparent brown infusion that tastes lovely on its own or with a bit of milk or sugar, if that is how you like your tea.

Ground and filtered as coffee: Take the roasted dried burdock and grind it in a coffee mill. Use it in a drip-filter or French press, and you'll have a heavier, heartier drink, with a slightly more bitter flavour than if it's just infused.

Glutenvrije Oliebollen!

I did it! Eindelijk heerlijke oliebollen gemaakt zonder gluten, boekwijt, soja, of eieren!

New Year's Eve has come and gone, and with it our requisite big batch of the traditional Dutch "oliebollen", which literally translates to "oil balls". Yum! Maybe they'd be better described as small, round, apple-citrus-currant fritters, made with a yeast dough and dusted with icing. If you've been gluten free for a while, and especially if you're also allergic to soy, eggs, and buckwheat, as my son is, you know that to mimic the light, elastic texture of yeast-risen wheat bread is difficult. Hence my elation at finally making this work. Since we only eat these once a year, I haven't had much opportunity for experimentation - it's been about 10 years of mediocre experimental oliebollen, so... you can understand our excitement about this. Enjoy!

Oliebollen
This recipe makes about 30 or 40 oliebollen (enough for a big party!).

Prepare and set aside:
  • 1 cup dried currants
  • zest of one lemon
  • zest of one orange
  • 1 large or 2 small apples, cut into small cubes

Heat in a small pan, until it's very warm but not too hot to dip a finger in:
  • ½ cup water
  • 1 tsp honey
  • 2 cups milk

Add, and allow to proof while mixing dry ingredients:
  • cut/zested fruit, from above
  • 1½ tbsp yeast

Mix in separate bowl:
  • 2 tbsp xanthan gum
  • 1.25 cup brown rice flour
  • 1 cup sweet or 'glutinous' rice flour
  • ½ cup potato starch
  • ½ cup corn starch
  • 1 cup oat flour
  • 1 tbsp egg replacer (I use Ener-G brand)
  • ¼ cup homemade vanilla sugar (see instructions, below) OR plain sugar; seeds of 1 vanilla bean
  • 2 tbsp baking powder
  • ½ tsp fresh nutmeg
  • ½ tsp salt

Mix proofed yeast mixture into dry mixture and allow to rise for about 10 minutes, as you heat the deep fryer to about 175 or 180 degrees C:
  • vegetable/sunflower oil (2 liters or whatever your deep-fryer or pot requires)

Using two soup spoons, scoop and form balls of batter; drop these into the hot oil. They will float up. Flip the oliebollen to be sure that they brown evenly on both sides, and when they're uniformly brown, lift them onto a large paper- or cloth-lined plate or bowl to cool. When they're all finished, dust with:
  • Powdered sugar

Home-made Vanilla Sugar
Make this ahead, and keep on hand for other recipes - it takes a few weeks to develop good flavour.

Get a glass jar with a lid that holds at least 4 cups. Clean and dry thoroughly.
Slice 1 or 2 vanilla beans lengthwise, place in jar, and fill with unbleached white sugar. Close tightly.
As you use sugar, replenish the jar, stir or shake, and you will always have some vanilla sugar available.
If you use 2 vanilla beans, the sugar will be flavoured sooner, but if you've got a few weeks to wait, one vanilla bean will be enough. After a few months or so you may notice the sugar is slow to take on flavour, and the beans are very dry - you can then slice and add another bean. I often take the dessicated beans out and grind them in my spice-mill to add to baking or to tea blends. They have less flavour than they once did, but it's still enough to benefit when adding the whole bean!

Water Kefir!

Thanks to Lisa Marie Bhattacharya, I now know how to make water kefir!
I've been using raw unrefined sugar, homegrown raspberries (from my mother in law!), and some lovely kefir grains from Lisa Marie. :-)) YUM!!!!

It's bottling day!!

Put the kefir grains to rest and feed in their little jar of yum.

Strain out the used-up raspberries.

Bottle for a day to develop CO2.

May Cakes Recipe!

One of our many varied May Day traditions is to bake with dandelion petals. This year we made dandelion buns and dandelion pancakes. Both of them were experimental, so I have no recipes for them. I do, however, have this recipe for Dandelion May Cakes, which is usually our maypole-dancing treat.
Dandelion May Cakes (gluten/dairy/nut/corn-free)

Harvest a basket of fully-opened large dandelion blossoms. Before they begin to close up (as soon as they are picked), carefully pull the petals from the blossoms, making sure to remove the bottom of the petals, where the flavour is. Discard the greens and continue collecting the petals until you have enough for your needs.
Preheat oven to 400°F. Put butter or baking paper a baking sheet, and set aside.

Combine in a bowl:

  • 1 cup sweet white sorghum flour
  • ½ cup tapioca flour
  • 1 cup (slightly packed) dandelion petals
  • 1 ½ tsp cream of tartar
  • ¾ tsp baking soda
  • 1 tsp xanthan gum
  • ¼ tsp sea salt
  • 4tbsp unrefined sugar
This work this mixture with your hands until petals are fully coated in the flours, and no more large clumps remain.
Cut into the flour mixture until it resembles course meal:
  • 4tbsp non-dairy butter or cream from the top of separated coconut milk
Mix up in measuring cup or small bowl:
  • ½ cup rice milk or the watery part of the coconut milk
  • 1 large egg
... and then pour over the flour mixture, mixing until dough forms large curds

Mix in:

  • 1/3 cup currants
On baking sheet pat dough to a circle, 3/4” thick. Cut into 8 wedges, to represent the 8 solar festivals (and by extensions, the seasons, and the turning of the year). Brush top with
  • 1 egg-white
Bake until just barely browned, and done, inside.


Our May Cakes Tradition:
Using a burnt stick from the Beltane fire, the children also scratch a charcoal X (rune: gyfu) into the bottom of one of the cakes, and the person who draws this lucky cake becomes the May King/Queen for the following year, is crowned with flowers. When the newly-crowned king/queen jumps over the fire, s/he symbolizes the turning of the year, and bountiful crops.

This year things were a little different; Tal was away, and I wasn't inspired to make May Day happen. So, being the resourceful person that she is, Rhiannon created May Day when he was home again! We had wild salad as usual, at a campfire dinner, followed by a very dark little maypole dance on a 1x2 with plastic wrapping ribbons tied onto it! Fabulous! Even without the traditional cakes, the colourful ribbons, etc. the real celebration is in love shared, and of course there was plenty of that!!
